How to cook dried legumes

Cooking legumes is a great way to save money, even more so if you choose dried legumes that keep for a long time in the pantry and cost a fraction of the price. Here's everything you need to know in order to cook dried legumes with ease.

How to prepare dried legumes

Three simple steps:

  1. Soak: Put in a bowl of water overnight (8 to 12 hours).

  2. Rinse: After soaking, rinse with cold water.

  3. Cook: Boil in a saucepan or pressure cooker

Which legumes require soaking?

All legumes must be soaked in water before cooking except for lentils and split yellow peas, which can simply be rinsed and then cooked.

A few tips:

  • Cooked legumes can be frozen. You can cook a larger quantity and freeze some for next time!

  • For busy days, try to have bags of frozen legumes in the freezer or a few cans on hand in your pantry.

Good for your health and the planet

Legumes are allies for our health. These plant proteins satisfy our hunger and improve digestion. They are full of fiber, contain iron and are low in saturated fat.

Opting for plant proteins is good for the planet, and even more so if they are grown locally. Good news: There are a variety of grains and legumes grown in Quebec.
